So, was looking around for something and stumbled across https://milanote.com/. If you scroll down to the very bottom of the intro screen you can click on templates to see what all they have on offer.  The creative writing looked really interesting for setting up stories and plotting out things, but there's a bunch of other options in there as well. There's a limited free option, not quite sure what they meant by some of the limitations they had listed, but they have paid options that allow you to do more as well.
